How about stir fries? I bring leftovers to work all the time, and they heat up exceptionally well.When I did South Beach I ate a lot of cold cuts and veggies. Yum.
Another good one -- I have last night's for lunch today and it had a few oz. of tofu, plus 2 small chopped zuchinis, carrots, 1/2 an onion, 1/4 cup of fresh chopped ginger and some sriracha, hoisin sauce, and soy sauce (1/2 - 1 tsp each) to taste. Wish I'd had brown rice instead of white, but it's still a pretty tasty, healthy SBD-2 friendly meal.
